The BIG Salami started as a weekend market business specialising in quality smallgoods that represent excellent value for money. The core range is sourced from a small family run business that produce product made to traditional European recipes. Made in commercial premises, the product complies with Australian regulatory requirements and we take pride in the fact that this range uses regional produce such as Byron Bay grass fed beef and Casino pork.
Being a temperature stable product has seen the demand for our range to expand to online sales and we now also attend multiple regional markets and field days.
As our product is made traditionally, it does not require refrigeration on display or during transport, enabling it to be purchased online and posted safely.
That said, we recommend that it be kept in cool dry conditions and once the vacuum sealed packaging is broken, the best way to store your product is in a paper bag (which is porous avoiding the product to sweat) and then stored in a sealed plastic container in the fridge which avoids it dehydrating too quickly and hardening.
